Chicken and Peanut Stew (+ Soul Food Love Cookbook Review)

The Review: The premise of Soul Food Love by Alice Randall and Caroline Randall Williams is family history, food, and eating a little healthier to break the cycle of obesity. The family history of this book is about a third of the book, focusing on each of the women down the family's lineage. Their personal stories as well as their food is discussed in great detail. This is a great document of a family's history and is the heart from which the rest of the book flows. I have made three dishes from this cookbook so far: Sweet Potato Broth, Chicken and Peanut Stew, and Sinless Sweet Potato Pie. All the recipes I've tried so far have been totally on point as well as recipes that I will definitely keep in my repertoire. Other recipes that I look forward to trying include Chicken Breasts with Grapes and Mushrooms, Spicy Pepper Chicken, Red and Black Bean Burgers, and Broccoli with Peanuts and Raisins. I was really excited to receive this book, but I found myself wishing...

"Take 5" Poke Cake

"Take 5" Poke Cake What is your all-time favorite Halloween candy? Take 5 candy bars are my absolute favorite candy! Where I live they aren't really available in many stores throughout the year, but the one time of year that I find them everywhere is during Halloween! I always buy several bags, and mostly are for me to stash for myself rather than to give out, haha. Last year, I posted "Take 5" Brownies for you to enjoy and this year I'm giving you another incredible recipe: "Take 5" Poke Cake that was originally created by Hayley from the Domestic Rebel . This recipe is incredibly easy as it uses a boxed cake mix and bottled caramel sauce. The original recipe calls for store bought whipped cream, but I decided to make my own whipped cream because I think it adds something a little extra to an already special treat. But if you just want to use the store bought, just substitute an 8 oz. container! So when you see those bags of "Tak...

Pumpkin Granola

Pumpkin Granola Welcome to Day 5 of Pumpkin Week! We're winding down Pumpkin Week and I know that I've been throwing a lot of dessert at you, but in the best kind of way! Today and tomorrow we are going to take a little bit of a break from desserts and have a little more of a healthy treat! This weekend I made a huge batch on Pumpkin Granola so that we can have them as part of our breakfasts or for our snacks. Usually when Joe and I get home, we munch on chips or any other goodies to hold us over before dinner. Funny how I never used to do that before I moved in! Or bought chips. Hmm. Anyway, we've been snacking on this granola all week and it is a healthier alternative to greasy chips or other store-bought processed food. The granola is a very easy recipe, so don't get turned away by all the ingredients! The recipe is also highly adaptable so you can add in or change the mix-ins in whichever way you'd like. I stayed true to much of Averie's recipe, bu...

Chewy Peanut Butter Granola Bars with Banana Chips and Dried Cranberries

This post was sponsored by the National Peanut Board and  Latina Bloggers Connect , but as always the recipe and all opinions contained in this post are my own. For many years, my standard breakfast in the mornings was a granola bar and a banana (and sometimes a cup of yogurt). It was an easy breakfast for me because I could just grab them on my way out the door or keep them stocked in my office. It made mornings a little easier because I was usually late for work and didn't have time for making breakfast; it made for a convenient and healthy breakfast for me while on the go. Today, I am presenting you a little bit of a homemade throwback of my old breakfast staple. It takes a standard chewy granola bar recipe and amps it up with a triple punch of peanuts (peanut butter, honey roasted peanuts, and peanut butter chips) as well as some banana chips and dried cranberries. I was actually going for a peanut butter, banana, and jelly sandwich flavor combination but the flavors ...

Fluffernutter Rice Krispie Treats

Fluffernutter Rice Krispie Treats My brother makes fun of me because I make so many peanut butter desserts. And he says I go through phases where I make one peanut butter dessert after another. Apparently he is right and the past two posts kind of attest to that. I absolutely love peanut butter and I didn't realize that there are several people who cannot stand peanut butter... what??? To me peanut butter is a staple and very "American"! So I apologize to all the peanut butter haters for my current peanut butter phase! :-) These rice krispie treats are a triple threat, seriously. There's peanut butter in the actual rice krispie mixture, it's topped with melted Reese's peanut butter morsels, and more topping of mini Reese's peanut butter cups. This is a Reese's lovers DREAM! No surprise that one of my favorite candies are Reese's, so when I discovered this recipe, I knew I would love these! And they taste just as good as they look!! Every...

Reese's Pieces Toffee Peanut Butter Cookies

Reese's Pieces Toffee Peanut Butter Cookies There I go slacking at updates again! I don't really have any excuse. I could blame school now that summer session has started up again last week or blame work or blame being busy. I got my recipes and my photos waiting to be uploaded and blogged, but I've really just reached a lazy patch. Back to goals and reminding myself of trying to post at least once a week! Because I have some excellent recipes I want to share with you! Anyway, meet Abby, the newest member of our household! She belongs to Joe's brother's family, but she came to live with us because his family can't take her with them when they move. Abby immediately made herself at home and has adjusted very well, especially to sitting on my lap! We've had this little dog for nearly two weeks and she's already very attached to me; she follows me everywhere and is constantly trying to find ways to sit on my lap or get a belly rub. Little Abby (or A...

Peanut Butter and Jelly Baby Lattice Pies

PB&J Baby Lattice Pies Through one of my favorite blogs, Juanita's Cocina , I found out about this new "book club" called "Pass the Cook Book Club." It's a group that picks a couple of recipes from a particular cookbook to make every single month. So every month bloggers will select one recipe, make it, and feature the recipe on their blog at the end of the month. Last month was Guy Fieri, but I just didn't have time to participate. This month, the club selected recipes from the Picky Palate, which is one of the most popular and creative food blogs available. I've featured one of Jenny's recipes on this blog actually, her famous Oreo Stuffed Chocolate Chip Cookies . She's got so many creative dessert recipes, I was so excited to try out another one of her recipes for my blog this month! Naturally, I chose her dessert recipe, Peanut Butter and Jelly Lattice Pies. This looked like a very easy recipe and appealing recipe, and I had...
