Reese's Pieces Toffee Peanut Butter Cookies

There I go slacking at updates again! I don't really have any excuse. I could blame school now that summer session has started up again last week or blame work or blame being busy. I got my recipes and my photos waiting to be uploaded and blogged, but I've really just reached a lazy patch. Back to goals and reminding myself of trying to post at least once a week! Because I have some excellent recipes I want to share with you!

Anyway, meet Abby, the newest member of our household! She belongs to Joe's brother's family, but she came to live with us because his family can't take her with them when they move. Abby immediately made herself at home and has adjusted very well, especially to sitting on my lap! We've had this little dog for nearly two weeks and she's already very attached to me; she follows me everywhere and is constantly trying to find ways to sit on my lap or get a belly rub. Little Abby (or Abby Gail as we've been calling her) is precious and has added some more sunshine to our house!

These Reese's Pieces Toffee Peanut Butter Cookies are a twist on the Heath Bits Peanut Butter Cookies that I made several months ago. I shipped off some of the original cookies as part of Steph's online bake sale to benefit Sam's Fund, which helps raise money and awareness for suicide prevention. I had extra ingredients and a bag of mini Reese's Pieces in my cupboard that have been waiting to be used and decided to add them into this recipe.

These cookies are incredibly easy to make and sure to please all you peanut butter lovers out there. You've got double the peanut butter with the Reese's Pieces and the peanut butter in the batter. The Reese's Pieces somehow add another dimension to the flavor that I absolutely love. This is a great adaptation to the original recipe that's going to have a permanent place in my cache of recipes!










Reese's Pieces Toffee Peanut Butter Cookies
Adapted from Hershey's

1/2 c. shortening (regular or butter-flavored both work)
3/4 c. peanut butter
1 1/4 c. packed light brown sugar
3 Tbs. milk
1 Tbs. vanilla extract
1 egg
1 1/2 c. all-purpose flour
3/4 tsp. baking soda
3/4 tsp. salt
1 c. miniature Reese's Pieces (sold in the baking aisle)
1/4 c. chopped toffee bits
additional miniature Reese's Pieces, for topping
additional chopped toffee bits, for topping


Heat oven to 375°F.

Beat shortening, peanut butter, brown sugar, milk and vanilla in large bowl until well blended. Add egg; beat just until blended. Combine flour, baking soda and salt; gradually beat into peanut butter mixture. Stir in miniature Reese's Pieces and toffee bits.

Drop by heaping teaspoons about 2 inches apart onto ungreased cookie sheet; top each with additional miniature Reese's Pieces and chopped toffee bits.

Bake 7 to 8 minutes or until set. Do not overbake. Cool for 2 minutes, then remove to wire rack and let cool completely.


Makes about 3 dozen cookies
