Pacari Chocolate is organic chocolate from Ecuador and is also a family-owned business. They have several unique flavors, among those is Andean Rose Geranium which I decided to use in my recipe today! Before I received my chocolate, I was trying to think about the different healthy recipes that I could feature but I didn't know which flavors I'd be receiving. Hello and welcome to the very first month of The Book Club Cook Book Cooking Crew! This is a yearlong project by other bloggers and myself where we read, cook and post recipes inspired by books in The Book Club Cook Book by Judy Gelman and Vicki Levy Krupp. There are so many books and recipes to try, I'm very excited to work my way through this book and be inspired to read new book and try new recipes! This month is being hosted by Camilla from Culinary Adventures with Camilla , and she has chosen the book Interpreter of Maladies by Jhumpa Lahiri. This book includes 9 stories in which all the characters in each of the stories struggles with being part of two cultures, East Indian culture and American culture. This is an incredibly beautifully written book! I almost didn't get a chance to finish the entire book, but I ended up reading it in its entirely in two days. Pumpkin Yogurt and Granola Parfaits

Pumpkin Yogurt and Granola Parfait It's Day Six of Pumpkin Week! Tomorrow is our last day of all things pumpkin! Today we're having Pumpkin Yogurt and Granola Parfaits. Remember that beautiful pumpkin granola that I featured yesterday? Well, today we're using some of that granola to make these lovely pumpkin parfaits! These parfaits are absolutely beautiful. I love the orange color with the little specks of chia seeds and all of the colors of the granola on top. The Greek yogurt adds a nice tanginess to the pumpkin and the pumpkin spice rounds out the flavors nicely. If you do not have pumpkin butter or maple syrup, add honey or any other types of sweetener that you have on hand. And if you don't have chia seeds, feel free to leave them out. And if you find the texture a little too thick for your tastes, add some almond milk or other liquid to thin it out a little bit.
